Fukujyu, a sencha type tea, has long been rated as one of the tea world's greatest greens. In order to produce the tea, first and second flush green leaf is plucked every 4 days, with pluckers taking care to select only the youngest, most tender leaf shoots. After plucking the tea is steamed in order to denature it, and halt fermentation. Next, the freshly steamed tea is rolled and pan-fired, a process that gives the tea its signature glossy sheen. The resulting cup is nothing short of exquisite with beautifully textured layers of grassy, vegetal notes that are sure to delight at any time of day.
