Green Peppercorns are unripe peppercorn berries that are quickly dehydrated to maintain a green colour and a mild fresh pepper flavour. They are often used as a seasoning in French and Thai cuisine.
Whole Green Peppercorns are excellent in terrines and sausages. They can be used to prepare the classic Steak au Poivre and to flavour vinaigrette for salads or roasted vegetables.
