
Fleur de Sel - Ile de Ré Croque au Sel is harvested from the surface of the water in salty areas and is made up of very fine crystals. It forms under the combined action of the sun and the wind. This Fleur de Sel (or "Sau-fine"), naturally white when dry, has a slightly pinkish hue when harvested and gives off a scent similar to that of violets. This is one of the particularities of Fleur de sel which is very rich in magnesium. Fleur de Sel, or Saunier's salt, is a noble salt reserved for the table and for culinary art.
