This Fleur de Sel (or "Sau-fine"), naturally white when dry, has a slightly pinkish hue when harvested and gives off a scent similar to that of violets. This is one of the particularities of Fleur de sel which is very rich in magnesium. Fleur de Sel, or Saunier's salt, is a noble salt reserved for the table and for culinary art.
